What is Hot Summer Spoon Cake?

A Hot Summer Spoon Cake is a type of cake that is usually made with fruit, milk, eggs, butter, sugar and flour. The ingredients are mixed together in a saucepan until the mixture becomes thick like pudding. Then it is poured over fresh fruit or other ingredients in a baking dish and baked.

Spoon cake is a dessert that has been popular in the southern United States for many years. It is traditionally served warm, hence the name hot summer spoon cake.

The base of this easy-to-make treat is a sponge cake batter that can be baked in a 9×13 pan, or cooked over an open fire on top of a pan with oil (or bacon grease) poured into it. Common additions to the traditional recipe include cinnamon, nutmeg, chocolate chips, raisins, and citrus zest.

The result is a moist but light cake that falls somewhere between cornbread and coffee cake texture-wise – perfect for slathering with your favorite frosting or even making into muffins!

Recipes for this summer dessert vary from region to region and can also include either whole milk or buttermilk as an ingredient.

When making this dessert at home, it’s important to have all of your ingredients ready before you start cooking so you don’t have any mishaps while following the recipe. Useful Tips for Making Spoon Cake

  • Halved strawberries, pitted and halved cherries, halved figs, raspberries, blackberries, or blueberries, or sliced plums, peaches, or nectarines are all recommended fruits.
  • The fruit should cover at least half of the batter, but some should show through.
  • While frozen fruit has many uses, we do not recommend it for this recipe.
  • Also, use a shallow and wide baking dish (rather than a deep and narrow one) so that the batter bakes evenly around the berries.

Hot Summer Spoon Cake endnote

In the summer, when temperatures get high and the heat index gets even higher, many people turn to ice cream, popsicles, and other cold treats to cool down.

However, thereโ€™s one classic dessert that is served warm instead of coldโ€”spoon cake. While its name might suggest that itโ€™s a cake you eat with a spoon, itโ€™s actually more of a bread pudding, with chocolate chips folded in rather than raisins or fruit slices.

In fact, although this dessert has cake in the name, it can be served at breakfast just as easily as dessert!
