Buche Tacos ingredients

  • 24 small corn tortillas
  • 2 pounds pork belly, skinless
  • 3 tablespoons vegetable oil, olive oil or good-quality lard
  • 3 tablespoons taco seasoning
  • 3 garlic cloves, finely chopped
  • 6 tablespoons distilled white vinegar
  • Salt to taste
  • 2 ½ teaspoons ground guajillo, ancho or other medium-hot red chile
  • pepper
  • ½ cup broth
  • 1 teaspoon toasted, coarsely ground cumin
  • 2 tablespoons butter
  • Tomatillo salsa, for serving
  • Salsa cruda, for serving
  • Radishes, trimmed, for serving
  • Cilantro sprigs, for serving
  • Water

Buche Tacos Recipe

  1. Allow a minute for the pork belly to cool. Cut the stomach into 1/4-inch squares and place it in a medium soup saucepan.
  2. Rinse the pork belly in cold water. Combine the pork or pork belly with 3 tablespoons white vinegar in a large mixing bowl. Wash the pig belly in water and vinegar by vigorously rubbing the creases against one another. As needed, rinse and repeat.
  3. In the meantime, bring a kettle of water to a boil. 5 minutes, or until the water turns white and hazy and scum rises to the surface, boil the pre-washed pork belly. After removing the stomachs from the unclean water, rinse them with cold running water.
  4. Apply taco seasoning to the fatty top layer of the meat.
  5. Season the pork to taste with salt and pepper. Using your fingers, rub in the garlic, chili powder, and cumin, kneading the seasoning into the meat. Allow the meat to marinate in the refrigerator for at least an hour or overnight.
  6. Heat the oil in a large cast iron skillet over medium heat. When the oil begins to wavy, add the meat and cook for 5 to 7 minutes, stirring occasionally, until lightly browned and cooked through. Keep the meat warm by removing it from the fire.
  7. Heat the tortillas on a hot griddle or in a non-oiled cast iron pan. Once or twice, turn them until they’re hot and puffy. As they come off the griddle, stack them on a cloth napkin with another napkin on top to steam.
  8. Place two hot tortillas on a plate and stack them together to make the tacos. Add a spoonful of tomatillo salsa and another of salsa cruda, then a smidgeon of sizzled pork on top. Serve garnished with radishes and cilantro sprigs.
  9. Cut into cubes and serve with tortillas and your favorite toppings as an alternative. About 1 ounce of meat is packed into each tortilla. Leftovers can be refrigerated for up to a week after being reheated. Freeze for a longer time period.
