A Pastel de chocolate (or Chocolate Cake) is one of the most famous desserts in Mexican cuisine, and the ultimate way to make your sweet tooth happy. This cake consists of several layers of chocolate sponge cake that are then filled with chocolate mousse, and covered with a thick layer of frosting made out of Mexican vanilla and ground cinnamon.

What is Pastel de Chocolate?

Pastel de chocolate, also known in English as a chocolate gâteau or chocolate cake, is a cake flavored with melted chocolate, cocoa powder, or both. It may also contain other ingredients. Fudge, vanilla creme, and other sweeteners are examples.

Pastel de Chocolate is available in dark or light colors and can be flavored with vanilla, chocolate, or cocoa powder. The most common pastel de chocolate ingredients are flour, sugar, eggs, butter or oil or margarine, a liquid, and a leavening agent such as baking soda or baking powder. Additional components and flavorings include dried, candied, or fresh fruit, nuts, chocolate, and extracts such as vanilla, with countless substitutes for the core ingredients. Pastel de Chocolates can be filled with fruit berries, preserves, nuts, or dessert sauces (such as pastry cream) and decorated with marzipan, piped borders, or candied fruit.

A pastel de chocolate has a spongy and soft texture and, unlike most other cakes, does not rise much. A pastry chef invented the pastel de chocolate in the mid-nineteenth century. On ceremonial events such as weddings, anniversaries, and birthdays, cake is frequently offered as a celebratory food.

Pastel de Chocolate Ingredients

  • 175 grams of Butter
  • 200 grams of pastry flour
  • 4 Eggs
  • 150 grams of Sugar (¾ cup)
  • 50 grams of Cocoa powder
  • 1 teaspoon baking powder
  • 25 grams of cornstarch
  • 75 grams of chocolate chips
  • 1 pinch of salt
  • 200 grams of Dark Chocolate
  • 200 milliliters of heavy cream (1 cup)
  • 1 tablespoon butter

For Ganache

  • 1/4 cup reserved chocolate/coffee drink
  • 1/4 cup milk
  • 4 tablespoons unsalted butter
  • 10 ounces semi sweet chocolate chips

Pastel de Chocolate Recipe

  1. Beat the butter until it is fully smooth to create a silky cream. The butter should ideally be at room temperature for this.
  2. While beating, add sugar. Add the eggs one at a time, once each is well incorporated, after everything has been well-integrated.
  3. Sift together all of the previously sorted dry ingredients, including the flour, baking powder, cornstarch, yeast, and salt.
  4. Stop mixing immediately before adding the flour and continue until you have a smooth, homogenous dough.
  5. Add the chocolate chunks after that.
  6. Once the chocolate cake batter is prepared, it is time to bake it. Put the mixture into a mold that has been greased with butter, and bake at a low temperature for 30 to 40 minutes.
  7. When it’s done, take it out of the oven and place it on a cooling rack.
  8. When the milk cream is hot enough to boil, pour it over the chopped chocolate and stir to incorporate to produce the tops. If you want more shine, you can add the butter. Until the frosting has the right consistency, refrigerate it. Similar to that, after the cake has cooled, put it in the fridge. After about an hour, remove the cake and the topping and decorate it. Keep the cake cool to prevent crumbs from falling off when it is covered in chocolate.
  9. Put the leftover chocolate/coffee drink, milk, and butter in a sauce pan to make the ganache decorations. Heat reduction to medium. As bubbles begin to appear around the rims, pour the boiling liquid over the 8 ounces of semi-sweet chocolate chips. The cake will be adorned with the final 2 ounces. Give yourself five minutes to rest. After whisking until smooth, let the mixture cool for two minutes. Finish by pouring a thin layer of ganache over the cake’s top. Fresh strawberries or raspberries and the leftover chocolate chips should be added.
