The word adana itself refers to the type of mutton or lamb used to make this dish, which comes from male sheep between three and five years old that have been fed on grain and are therefore leaner than other sheep, making the meat even more tender than usual when cooked.

Ingredients Needed For Chicken Adana

  • 2 lbs ground chicken (qeema)
  • 1 onion chopped
  • 1 red capsicum chopped
  • 1 large green chilli
  • 1/2 cup cilantro
  • 4 cloves garlic
  • 2 tbsp ghee
  • Salt to taste
  • 1 tsp red chilli flakes
  • 1 tsp pepper powder
  • 1 tsp Kashmiri Mirch
  • 1 tsp lemon juice

How to Make Chicken Adana Step by Step

  1. In a food processor, combine the onion, capsicum, cilantro, garlic, and chili, and squeeze out all of the water and juices.
  2. In the same food processor, combine ground chicken, salt, chili flakes, Kashmiri Mirch, pepper, and lemon juice, and then transfer to a bowl.
  3. Combine the ground chicken with the onion, capsicum, garlic, chili, and cilantro mixture. Allow it to marinate for 1 hour.
  4. Using flat skewers, make Kababs out of the marinated chicken.
  5. Cook the Kababs on a preheated tawa or grill until each side is golden and the chicken is cooked through. Ready!
  6. Warm bread (pide or pita), sumac onions, parsley, mint, roasted tomatoes, and blistered peppers go well with the kebabs. Also delicious with Turkish salsa and yogurt sauce.

Serving Suggestions

Serve it with rice, bulgur, or other grains. Top with fresh parsley and lemon juice for an extra burst of flavor. It is perfect for any time of the year. Make it into a sandwich by putting it in pita bread with lettuce, tomatoes, pickles and tahini sauce! You can also make it into a salad by topping it with chopped veggies like cucumber, tomato, red onion and green pepper.
