  • Salt, to taste

Cau Cau Peruano Recipe

  1. Boil the tripe for about 1 1/2 hours, or until soft, in water with two tablespoons of milk and peppermint sprigs.
  2. After the tripe has been cooked, cut it into 3/4″ squares.
  3. Heat the oil in a large pot. In the hot oil, cook the onion, garlic, cumin, aji pepper, and turmeric until the onion is translucent.
  4. Then add the tripe and diced potatoes.
  5. Cook until the tripe and potatoes are fully cooked. Add the peas and mix well.
  6. Garnish with the leftover mint and cilantro.
  7. Serve with a squeeze of lemon juice and a pinch of aji, serrano, or jalapeo pepper. White rice is a nice side dish.
