My Tested Pistachio Shot Recipe

Over the years, I have refined and perfected my own go-to pistachio shot recipe that I am sure will impress the guests at your party. While you can use pre-shelled pistachios, I actually prefer starting with nuts still in the shell – I find that starting with nuts still in the shell results in a richer and more assertive pistachio flavor.

My method involves soaking the unshelled nuts overnight to soften and intensify their natural oils. I then remove the shells, quickly blanch the nuts, and blend them into a smooth “pistachio milk” with water, lime juice and a touch of agave nectar for sweetness.

Ingredients

  • 1 cup shelled raw pistachios (unsalted)

    1/2 cup water (plus more for soaking)

    1/4 cup agave nectar or honey

    2 tablespoons fresh lime juice

    3 cups of milk (dairy or plant-based)

    1 teaspoon of vanilla extract

    1/4 teaspoon salt

Directions

  • Place the pistachios in a bowl and cover with water. Allow to soak at room temperature for at least 6 hours or overnight. This will help soften the nuts and allow for better blending.
  • Drain the soaked pistachios and rinse under cool water. Transfer to a saucepan and cover with fresh water. Bring to a boil, then remove from heat, cover and let sit for 5 minutes to blanch the pistachios slightly.
  • Drain the blanched pistachios and allow to cool completely.
  • In a high-powered blender, combine the soaked and blanched pistachios, 1/2 cup water, agave/honey, lime juice and salt. Blend on high speed for 2-3 minutes, scraping down sides as needed, until completely smooth and creamy like a nut milk.
  • For best quality and flavor, use the pistachio milk base right away. Leftovers can be refrigerated for 3-4 days.
  • To make pistachio shots: Mix equal parts pistachio milk base, vodka and amaretto liqueur. Adjust sweetness by adding more agave if desired. Shake vigorously with ice and strain into shot glasses rimmed with crushed pistachios.
  • give it all a vigorous shake over ice until fabulously frothy and creamy. The amaretto complements the nutty notes, while the zippy lime cuts through the richness.
  • For a fun garnish, I like coating the rim of the shot glass with a blend of crushed pistachios, sugar and lime zest. You can also float a few pistachio nuts on top.
  • While you can certainly use lower-fat ingredients like skim milk, I really encourage going for the full-fat versions for supreme velvetiness.

Tips for the Best Pistachio Shots

From my experience, a few tips will help ensure pistachio shot success:

  • Use high-quality ingredients – premium vodka, real pistachios (not a processed nut milk), and freshly-squeezed citrus. It makes a difference!
  • Don’t overshake or the mixture can turn buttery. A good 10-15 seconds is plenty.
  • For cooler weather, you can skip the ice shake and serve the shots chilled but not frozen.
  • Let guests garnish their own shots with crushed pistachios for added crunch.
  • Have beer nuts or a salty snack on hand – the richness begs for a savory contrast.

How to Store Your Pistachio Shots

The prepared pistachio milk base can be refrigerated for up to 4 days.
